Initiation

I landed in Punta Gorda (PG), Belize 5 days ago. I have a small, comfortable apartment with half of an ocean view, a wonderful sea breeze and a kitchenette.

Admittedly, and to my mother's dismay, I am not much of a cook. Even when I have all of the tools, ingredients and recipes available my meals turn out edible, but uninspired. Despite this awareness, as I set off for 10 weeks to Belize, I planned to dine in my apartment to stay on a tight budget.
